At FITJ, we embrace an organic approach that prioritizes seasonal ingredients, many of which we grow in our garden.

Our dining setups are designed to feel homey and connected to nature, giving you that warm, earthy vibe. When it rains, you can enjoy the serenade of our froggy friends, while the sounds of nature create a symphony around you throughout the day.

We don’t just celebrate seasonal bounty; we also dedicate time to fermenting our ingredients. Each week, we whip up several batches of our signature house-made kombucha and tempeh, with a special spotlight on foraged edible plants from our surrounding homestead.

Behind FITJ

Fork in the Jungle is a passion project brought to life by Federico Folcia, an Italian entrepreneur who turned his 24+ years of globe-trotting into a serious but fun passion project.

When he's not running Crane during the day, you may find him at FITJ, bringing his multiethnic team together to whip up dishes & concepts inspired by flavors from every corner of the globe.
